Sumario:This work is framed in the past-present debate and in the reflection emerging from a research about social processes of historical change covering an extensive period -the 1970’s up to present- through theeventualization procedure. The demarcation of two critical events allows clarifying the organizational principles and the variations in the interwoven bonds of patrones and peones belonging to wineproduction farms. Based on the case of Finca Animaná, the articulation of scales of analysis to critical events, like the “Finca outing” and the “animanazo”, become central to study the processes of social changeand economic restructuring spread through the whole Valley. From their own experience the agents involved elaborated the past and present applying singular notions of temporality, thus offering a way of accessto these processes.
