Sumario:This work estimates the influence of the experimental error in the determination of food isotherms on the precision of isosteric heats calculated by application of the Clausius-Clapeyron equation. Foods for which precise sorption data are available were analysed; the resulting uncertainty in calculated heats was important and suggested that alternative techniques should be used when a more quantitative picture of the heat of sorption is desired. © 1992 Academic Press Limited.
