Sumario:Water activities of corn, sorghum, rought rice and wheat were determined at 20, 30, 40 and 50°C for different moisture contents by means of an electronic aw meter. The equilibrium values and temperature shifts were modelled with a three parameter equation in the approximate aw range 0.2-0.9. An analytical expression to calclate the isosteric heat of sorption and its moisture content dependence, was derived. Values for the isosteric heat of sorption calculated from the experimental equilibrium data by means of the classical Clausius-Clapeyron equation were compared with those obtained from the analytical expression. © 1992 Academic Press Limited.
