During the 1900s it is possible to see the acceptance of those technologies. In this paper, we discuss the process based on the particular dynamics of introducing innovations in the wine-cellars and the public policies that took effect in the technological area, specifically in human resources training (winemakers). So, we evaluate the results of these sector policies through the subsequent insertion of technicians in the cellars from 1904, a time of economic and agro industrial expansion. We are also interested in the contextual factors that promoted or retard the extension of this figure in local wineries. Our research is part of a perspective that links the study of educational projects with productive orientation and its contribution to the introduction and dissemination of innovatory and technological adaptations. La conformación de una economía capitalista regional especializada en una vitivinicultura de masa en Mendoza, orientada hacia el mercado nacional, implicó un espectacular cambio técnico que cristalizó, hacia 1890, en cultivos vitícolas de altos rendimientos y en bodegas tecnificadas, de gran capacidad de elaboración, superadoras de viejas tradiciones artesanales. Ya durante la década de 1900 es posible vislumbrar la maduración y adaptación de aquellas tecnologías. En el presente trabajo, analizaremos este último proceso sobre la base, por un lado, de las particulares dinámicas de introducción de innovaciones en las bodegas y, por el otro, de las políticas públicas que tuvieron repercusión en el área tecnológica, específicamente en la formación de recursos humanos (enólogos). Evaluaremos, así, el impacto de estas políticas sectoriales a través de la posterior inserción de aquellos técnicos en las bodegas a partir de 1904, un momento de expansión económica y agroindustrial. Nos interesa conocer, además, los factores contextuales que promovieron, o retardaron, la extensión de esta figura en las bodegas locales.
