Purified S-layer protein of Lactobacillus acidophilus ATCC 4356 has antimicrobial and antiviral properties that could be exploited. With a similar objective will seek for these properties in the S-layer proteins of strains of Lactobacillus brevis, Lactobacillus helveticus and Lactobacillus kefiri, against different pathogens. We studied how this bacterial surface structure can influence in the probiotic characteristics such as binding to epithelial cells, and the barrier effect against pathogens (bacterias and virus). Through construction of Pseudomonas aeruginosa strains with fluorescent reporter gene we verified the ability of the purified S-layer protein to protect eukaryotic cell cultures against bacterial and viral pathogens and their effect on biofilm formation on biotic and abiotic surfaces.\nA considerable decrease in biofilm formation of P. aeruginosa was obtained when this was treated with S-layer of L. acidophilus, L. brevis and L. helveticus. Also we found a decrease in the adhesion of the pathogen to A549 cells pretreated with S-layer proteins. A decreased was observed for viral infection of HSV-1 to A549 cells pretreated with S-layers proteins studied, except that of L. kefiri.
