The study proceeds in two levels. In the first one, we analyze the syntactic structure of a series of expressions that refer to the semantic field of smells, and, from this, we propose a cognitive model to analyze the semantic structure of these expressions and others obtained from dictionaries. O objetivo deste artigo é analisar os mecanismos que a língua espanhola utiliza para designar os odores entendidos como um campo semântico a partir da perspectiva da etnosemântica e da linguística antropológica. O estudo é feito em dois níveis, primeiro analisa-se a estrutura sintática de uma série de expressões que se referem ao campo semântico do odor, e, a partir disso, é proposto um modelo cognitivo para analisar a estrutura semântica dessas expressões e de outras obtidas a partir de dicionários.
