El alimento es un eje vertebrador de políticas públicas que vincula necesariamente a los sujetos de la actividad agraria con los consumidores. Es importante describir someramente la evolución histórica del acceso y provisión de los alimentos y la incidencia de las políticas públicas en la materia. En particular el sector de la agricultura familiar es clave en la producción de los mismos en la actualidad por el rol que tiene en el arraigo, la producción diversificada y los canales cortos de comercialización.
