Argentinean honeysare well considered products by the international apicultural trade due to bothorganoleptic and chemical properties. The aim of this study was to determine in vitro theantioxidant potential, flavonoid content and antimicrobial activity of Argentinean honeysfrom different geographical regions of Argentina with a predominance of clover pollen.Data were statistically tested with the aim of classifying honeys and identifying the mostsignificant parameters. Botanical source of honeys was confirmed by pollen analysis. Theantimicrobial activity of different concentration of honeys against Staphylococcus aureuswas evaluated by the agar well diffusion method for both total and non-peroxideantimicrobial activity. The phenolic compound content was determined according to theFolin-Ciocalteu method and the antioxidant capacity was determined by scavenging ofthe radical 2,2 diphenyl- 1- pycrilhydrazyl (DPPH). Flavonoid content was measuredusing a spectrophotometric method. Honeys were identified as: 1) Trifolium sp.,Melilotus sp., Medicago sativa and Lotus sp., 2) clover honeys had prevalence for thepollen above mentioned higher than 45%, when these types are considered all together.All honeys showed total antimicrobial activity depending on its concentration and floralsource, being observed in some cases to both the hydrogen peroxide and non-peroxide factors responsible of the growth inhibition. Medicago sativa honeys showed the lowestphenolic compound content, expressed as gallic equivalent, being in average value 19mg/100g of honey. The radical scavenging activity, expressed as inhibition percentage ofDPPH, showed that this activity varied among the different honeys. The highest contentof total flavonoid expressed as mg of quercetin corresponded to Lotus sp. being inaverage value 4.23 ± 2,54 mg /100g of honey. The analysis showed that the studiedparameters allowed to discriminate to Lotus sp. honeys, being flavonoid content thevariable with the greatest discriminatory power. © 2012 by Nova Science Publishers, Inc.
